Mix together the warm 1.5 cups water, 1 tlbs sugar, and 2tsp salt. Add the yeast packet with a few gentle stirs and the let sit for 5 minutes.
Add the flour and knead on a floured surface for 5 minutes or use the dough hook on a stand mixer. Add more flour as needed until it no longer sticks to other surfaces.
Roll the dough ball in the oil and let rest covered in a warm spot for 30 minutes.
After the dough has risen, start bringing the 10 cups of water and the baking soda to a boil and preheat the oven to 425°F.
Mix together the egg yolk and 1 tlbs of water.
Roll out all the dough into 2 or more pretzel shapes. It may be easier to roll 2 shorter dough cylinders and then combine them together before twisting into a huge pretzel shape.
Submerge the pretzels one at a time in the boiling water mixture with a slotted spoon for 45 seconds. Place on a baking sheet, brush the pretzels with the egg mixture, and then sprinkle salt on top. Bake for 25 minutes or until brown.
